Poached Wings v2

 

 

I got 6-7 lbs of flats. It was less than $40, tax and tips included, free delivery.

The amount of liquid can be adjusted depending on the size of the pot and the amount of chicken wings being prepared.
  • chicken wings (I like flats; drumettes and flats or drumettes only are fine but they should be cut instead of whole wings)
  • enough water to cover the wings (note the amount)
  • salted water, chicken broth, or chicken/vegetable broth (do not use beef, pork, seafood, fish, shrimp, etc. broth or vegetable broth only), same amount as the blanching liquid
  1. Put the wings in a large pot and cover with cold water.
  2. Bring the water to just below boiling. Drain and rinse the wings. Dunk the wings in an ice bath to stop the cooking. Drain. Clean the pot.
  3. Put the same amount of broth as the previous blanching liquid and bring to a boil.
  4. Drop in the wings and ensure they are all submerged.
  5. Bring to a boil, cover, and turn off the heat.
  6. Let the wings cook in the residual heat for 30 minutes.
  7. Drain and rinse the wings. Dunk the wings in an ice bath to stop the cooking. Drain.
  8. Portion out the wings. Fry or deep fry if desired, but they can be served without frying.
  9. Sauce or toss in dry rub. Refrigerate or freeze the rest.
