Digestive Biscuit-Crusted Cod

 

I love digestive biscuits, but there are only so many ways to eat them as they are, so I thought I’d make a savory dish with it.



I was thinking of making Fish and Chips, but I prefer not to deep fry anything. I adapted this from a recipe that uses chicken.

  • 4 digestive biscuits
  • 3 tblsp cornstarch
  • 1 tsp curry powder
  • 1 tsp chili pepper powder
  • 1 tsp salt 
  • 1/2 tsp pepper
  • 2 cod fillets
  • 1 large egg, beaten with 1 tbsp water
  • 4 tblsp vegetable oil
  • 1 tblsp Smokehouse Maple Seasoning

  1. Place digestive biscuits in a zip top bag and crush into fine crumbs using a rolling pin. 
  2. Mix cornstarch with salt and pepper.
  3. Add half the seasoned cornstarch, curry powder, and chili pepper powder to the zip top bag. Shake to mix. Pour the biscuit-crumb mixture onto a plate.
  4. Pat the cod dry with a paper towel and coat with remaining seasoned cornstarch.
  5. Dredge each piece first in the egg wash, then press it firmly into the biscuit-crumb mixture to create an even coat.
  6. Heat vegetable oil over medium-high. Fry the cod for 3 minutes per side until golden brown and cooked through.
  7. While still hot, season cod with Smokehouse Maple Seasoning.
