Vienna Sausage Chow Mein

 

I had purchased a few cans of Vienna Sausage (don’t ask), and I was trying to think of a way to use the last can. This is somewhat like chow mein. I used dried (not instant) ramen. Angel hair works well, too.

  • 1 serving of dried noodles
  • 1 tsp sugar
  • 1 tblsp light soy sauce
  • 1 cup kale, tough stems removed and roughly chopped
  • 2 tblsp vegetable oil
  • 1/2 onion, chopped
  • 1/2”ginger, julienned
  • 3 cloves garlic, finely chopped
  • 1 can Vienna Sausage, drained and sliced
  • chopped scallion for garnish
  • sesame seeds for garnish
  1. Cook noodles according to instructions. Rinse in cold water and drain. Set aside.
  2. Mix sugar and soy sauce in a small bowl and set aside.
  3. Boil kale until soft. Drain and set aside.
  4. Heat vegetable oil in a wok over high heat and sauté onion, ginger, and garlic until fragrant.
  5. Add Vienna sausage and stir fry for a couple of minutes. 
  6. Add kale and stir fry for a minute.
  7. Add noodles and stir fry for a couple of minutes.
  8. Pour in sugar/soy sauce and mix well.
  9. Garnish with chopped scallion and sesame seeds.
