I had purchased a few cans of Vienna Sausage (don’t ask), and I was trying to think of a way to use the last can. This is somewhat like chow mein. I used dried (not instant) ramen. Angel hair works well, too.
- 1 serving of dried noodles
- 1 tsp sugar
- 1 tblsp light soy sauce
- 1 cup kale, tough stems removed and roughly chopped
- 2 tblsp vegetable oil
- 1/2 onion, chopped
- 1/2”ginger, julienned
- 3 cloves garlic, finely chopped
- 1 can Vienna Sausage, drained and sliced
- chopped scallion for garnish
- sesame seeds for garnish
- Cook noodles according to instructions. Rinse in cold water and drain. Set aside.
- Mix sugar and soy sauce in a small bowl and set aside.
- Boil kale until soft. Drain and set aside.
- Heat vegetable oil in a wok over high heat and sauté onion, ginger, and garlic until fragrant.
- Add Vienna sausage and stir fry for a couple of minutes.
- Add kale and stir fry for a minute.
- Add noodles and stir fry for a couple of minutes.
- Pour in sugar/soy sauce and mix well.
- Garnish with chopped scallion and sesame seeds.
