Curried Lentil Soup

 

I wanted something that would be gentle on the stomach, but I didn’t want congee.

  • 1/2 cup yellow lentils, soaked overnight and drained
  • 2 cups water
  • 6 cloves
  • 6 green cardamom pods
  • 1 cinnamon stick
  • 1 tsp ginger paste
  • 1 tsp salt

  1. Put everything in a saucepan and bring to a boil. Cover and turn the heat to low and simmer for 2 hours.
  2. Gently whisk the soup before serving.
